Costa Rican Coffee Cupping

Strictly Hard Bean (SHB) Costa Rican coffee is determined by taste and aroma, and not by appearance and provenance. Thus, when processed green coffee samples arrive from the numerous Costa Rican coffee regions, roasters draw and roast samples, then cup (taste) them to determine their quality. Once the cupper has established the quality of the sample, the roaster will make the coffee mill an offer for the lot.
